In The Kitchen With…..

Another day lost to the kitchen….remember when that used to be fun for me? Yes, I am still struggling with the new way of eating/cooking. I fear that I have started to become too dependent on the new foods containing almond flour. I really like those salt and pepper crackers! In my search for a new salty snack I fell back on an old one….kale chips. Will they satisfy my desire for potato chips? Maybe? I will find out this week…

I would never have left the house today if I didn’t have to pay the internet service bill. When I drove up and put the payment in the night drop I saw that they were closed tomorrow. I knew that! I could have swung by after work tomorrow…oh well, it’s done now.

I played around with onion rings that turned out like those fake things that go on the green bean casserole. I will give them a try on my salad for lunch tomorrow. I also tried a bloomin’ onion recipe that the girl found. It was gluten free and she said it was a winner but she didn’t say it with any enthusiasm. I made a roasted red pepper salad recipe which was pretty tasty and then did some prep. I sliced up two bunched of radishes that are soaking in water ready for a salad or for a snack.

I also ventured  into the deep unknown and gave my best shot at homemade sauerkraut. I won’t know for a week or two if it’s a success or not? I need to suck it up and give it a try…. the benefits outweigh the fear.

I found a cheese that likes me! I ate some gouda cheese last night and there was no bloating and no little bumps on my cheeks in the morning. I love cheese so I am excited to find one that that agrees with me so far.

Yesterday I had a field trip with the naturalist program. My phone took me on the scenic route. In some ways it was nice….I was almost always alone on the road. In other ways it was a little nerve racking. I wasn’t familiar with the windy back country roads that were hilly and the speed limit was 55 mph. Sometimes I came up on a hill and there was a road sign indicating bends ahead…I couldn’t see over the hill and didn’t know when the bend would be there and in that way it was unnerving. Luckily no one was behind me. I made it there in plenty of time and thankfully had no other issues getting there.

It was mostly about birds yesterday and it was my favorite class so far. Here are some pictures of a red tail hawk that didn’t make it after an injury and now is used for educational purposes.

There was a room full of windows where we ate lunch and were able to watch birds at the feeders. We even participated in the big backyard bird count as a group.

I really learned a lot yesterday. I would volunteer at this center if it wasn’t so far away.

We had to bring a brown bagged lunch to this event and I really missed the days when I could throw a sandwich and a bag of chips in a bag and call it a day. I ended up bringing a big salad with tomatoes and a hard boiled egg. I was going to bring an egg salad but had another homemade mayo fail. I have successfully made mayo before so I don’t know why I have been struggling with it recently. This last recipe I tried was  in the magic bullet and while it was running I was looking on Pinterest for another recipe when the non mayo exploded all over the kitchen. Yep….I had to wipe down walls, cabinets, ceilings, and the floors were washed earlier than scheduled  this weekend. So yeah….the salad was my sane choice. I will get this eventually but it’s really hard right now…..Zia
